Prime Is the Only Way to Go...

I don't eat steak often, but when I do, I splurge on the best quality and cuts.  Prime is the most expensive, and usually has the best marbling.  I'm no longer willing to waste money on something cheaper with the finished consistency of shoe leather. 

Easiest and best -- rib eye grilled with salt and pepper.  A great steak needs nothing more.

Yet if I'm trying to impress, tenderloin is the way to go.  I have the butcher slice it into medallions, and I cover with salt and pepper and char it in a cast iron skillet.  In the same pan, I melt a little butter and saute shallots, then reduce some red wine and beef stock.  Mix in a couple of tablespoons of Boursin cheese off heat and mmmm....

I totally agree. In fact, I grilled a sirloin on the grill this week and what we didn't eat for dinner, I saved and made steak sandwiches with for lunch. Salt, pepper -- it's all you need, I think if you buy a good cut...thanks for the comment!

I'm a big fan of grilled steaks.
