Cheese SconesI also like to bake.
Here is a recipe passed down through generations in my family, one of my favourite things to bake ^_^ give it a go :
200g self-raising flour
1 & 1/2 level tsp baking powder
50g butter (cubed)
50g grated cheese
salt & pepper
1 egg made up to 1/4 pint with milk (lightly beaten)
Sift the flour, baking powder, salt & pepper together. Add the butter and rub it in with your fingertips until the mixture resembles fine breadcrumbs. Mix in the cheese. Make a well in the centre and add the egg and milk. Mix with a fork to form a rough dough. Turn out onto a floured surface and knead for a moment until smooth, adding a little more flour if necessary.
Roll the dough out to 2cm thickness, cut circles out with a cutter or a large glass. Place onto a lightly floured baking tray and cook for 15 mins at 220 C.
Best eaten straight out of the over, with lashings of Lurpak butter.
