Posted Jan 16th, 2008 at 3:59PM In America there is in my opinion a confusion regarding what is Spanish ( from Spain ) and what is Latin American ( meaning countries from Central and South America and some Caribbean Islands). Spanish is Paella, Flan, Tocino del Cielo and Turron de Alicante, for example. Latin American food is so varied and so different. I dont know many Dominican dishes, I have tried some Puerto Rican specialities, some Venezuelan arepas and Colombia´s soups. But I still havent tried Peruvian food which I hear is pretty wonderful and someday I would like to have an "asadito" somewhere in Argentina where I hear the beef is wonderful. If you have any Dominican recipes you want to share I am all ears.
Posted Jan 16th, 2008 at 6:35PM I love arepas and colombian soup. I will give you the Tostones (fried plantains)recipe. they are ereally good. You can buy them in any grocery store. they are green bananas. 1. You peel the plantains and cut them into 1 inch thick slice. 2. In a deep frying pan heat oil and fry the plantains until they get golden brown (not black or dark brown) 3. Take all the plantains out and flatten the plantains using the bottom of a flatbottom glass bottle. Fry the plantains again for 30 seconds on each side. 4. Then if you want you can add salt and ketchup with it it taste so good you are going to love them.

Posted Jan 19th, 2008 at 9:10PM With all due respect I think I need to correct Keira on her definition of chimichurri. It is not a type of hamburger. It is a sauce . It is made with herbs such as cilantro, and parsley, onions, garlic and oil, used to spread on steak ( grilled beef ). It is my understanding it is Argentinian but I know it is widely used in South America. It is really tasty and goes great with steak.
Posted Jan 21st, 2008 at 10:57AM I am so sorry underconstruction. In the Dominican Republic Chimichurii is a type of hamburger. I know that in some countries they use it as something else. These are the ingredients. for 4 people 1. 4 hamburger buns (the ones you can open from one side) 2. 2 pounds of ground beaf or chicken 1. 1/2 teaspoon of crushed garlic 2. 1 large onion cut into rings 3. 2 large tomatoes cut into slices 4. 2 cups of shredded cabbage 5. 2 teasppon of oil 6. salt, ppeper, oregano, ketchup and mayonnaise Preparation 1. Mix meat with onions, garlic, a pinch of orenano and a pinch of salt. 2. Divide the meat into 4 portion and form into 4 patties (with the chicken you don't have to) 3. brush a stove-top grill with someof the oil and heat 4. Grill the patties rotating until they are well done 5. Turn down the heat at it's minimun and you can grill the tomatoes with some onions. You can also cook the cabbage. 6. warm up the bread. 7. Put some ketchup and mayonnaise, then add all the ingredients. It taste soooo good. I fell like eating one now.
Posted Jan 21st, 2008 at 11:20AM Thanks Keira for your comment. I had never heard of Chimichurri being other thing than a sauce . Paraphrasing the saying I could add now that Argentina and the Dominican Republic seem to be two countries separated by a common language !! In case you want to have it here is the recipe for chimichurri - the sauce - : 1 bunch flat leaf parsley 1 bunch of cilantro 3 cloves garlic, minced 3/4 cup extra virgin olive oil 1/4 cup red wine vinegar 1 lemon wedge (juice of) 1 tablespoon diced red onions 1 teaspoon dried oregano (optional) 1 teaspoon black pepper 1/2 teaspoon salt Pulse parsley and cilantro in processor to chop. Add remaining ingredients and blend. Separate sauce into equal parts. (Use half for basting or marinade). (Use other half for table service). Of course, some people add more vinear, or oil, or herbs but this is pretty much how chimichurri is made. Keep posting more of your recipes. I would like to know more about Domincan food. How about sweets and desserts ?
Posted Jan 21st, 2008 at 11:27AM I just did some research and we are both right . It is the name for a sauce , and a type of hamburger in the Dominican Reublic. This a little explanation I found: " CHIMICHURRI : This dish, made throughout the Dominican Republic in small street stands, each with their own recipe and their own flavour, borrows its name from the Argentinian sauce for marinades. The name is the only thing in common between the two and I have no idea why this came to be " Check: www.dominicancooking.com
