Apple Bbq Pork Roast (crock Pot)I made this a couple days ago and it was so damn good, so I just had to share it with y'all! Enjoy :)
Pork loin roast, between 1.5 and 2 lbs
2 cups of coffee (or whatever you have left in the pot with some water to equal 2 cups of liquid)
2 small apples (I used golden delicious from my family's orchard)
1 small white onion
4-8 small to medium potatoes
1 cup (sweet baby rays) BBQ sauce
salt and pepper to taste
First turn the crock pot on, salt and pepper the roast, and put it in the crock pot. Pour in the coffee. Arrange potatoes around meat. Slice the apples and onion, and sprinkle them over the meat and potatoes. Then drizzle the BBQ sauce over everything. Let it cook on high for about 4 hours, OR on low for about 6 hours.
The leftovers (if there are any) are perfect for pulled pork sandwiches, just pull and add BBQ sauce. I added some of the cooked apple and onion slices and it was AWESOME!
