World's Most Pretentious Sounding Muffin

I made these last night for my kids class and they got RAVE reviews from the preschoolers and teachers alike.

Apple Cinnamon Oatmeal Strudel Mini Muffins

I started with a box of cinnamon apple muffin mix (I cheated, but obviously you can use a standard bare bones mffin recipe and add more cinnamon and/or apple pie spice). I prepared the batter as directed and preheated the oven.

Next, I peeled, cored, chopped, and steamed an apple with a dash of vanilla and cinnamon. Then added the apple and 1/2 cup of oats to the batter.

I made the strudel topping by mixing 1/3 cup each of brown sugar, whole wheat flour, and oats. Then added a dash of apple pie spice for good measure.

I used my measuring spoon to put a tablespoon of batter in the paper lined mini muffin cups. Then topped with a teaspoon of strudel mix. They baked for 13min at 350°, and I got 44 mini muffins out of one batch.

These are great for quick breakfasts! I freeze them in bags of 6 (3 for each kid), pop them in the microwave for 30 seconds, and they are warm and delicious!

I make apple cinnamon crumb cake a lot. I do have a muffin recipe that sounds similar. It is really good. But lets face it, you can't go wrong with apple cinnamon anything!

Sheesh....now I'm hungry.
