Peas And CarrotsIf you like peas and carrots here is a dish for you. I am making it today!
You can use chicken, beef, or lamb in this or even make it without meat.
You take a little oil, sautee' finely diced onion and add whatever meet after onion cooks a bit...now you add allspice, pepper, to your meat. Let it brown a little and add water to cook...after meat or chicken is done you add peas and carrots. Fresh, frozen, whatever you have. Add tomato paste or sauce, depending on the amount of liquid you have and let simmer. I add salt and adjust spice if need be here and then add a generous amount of fresh garlic.
Let simmer for about 30 minutes and it's great over rice....tradition is to do this with meat but my kids have always preferred chicken breast. Whatever you feel for works. :) Enjoy!
