Keep It Simple, But Good

As much as I like to cook, I just can't get into the 20-ingredient, hours on your feet recipes . . . especially if they're not earth-shattering when you eat them. Nothing bugs me more . . . ok, FEW things bug me more . . . than to spend all day in the kitchen only to turn out something that nobody likes, especially me. As a frugal Scot (I guess that's where it comes from), it really burns my bacon to waste the ingredients that way.

Give me a tender juicy steak cooked properly . . . med. to med-rare for me, and no, I don't need a server in a restaurant to tell me what that means :-) . . . a well-seasoned roasted chicken . . . melt-in-your mouth salmon with a simple dill sauce . . . and I'm a happy person.

Mmmm...you're making me hungry :)

I completely agree! I can't even tell you how many countless hours I've spent in the kitchen making some elaborate meal for my family only to have my kids roll their eyes, take 2 bites and declare themselves stuffed.
I try to keep it simple unless it's something I know everyone loves.
