A Tale Of Mahi Mahi

  • 4 oz Mahi mahi fillet
  • 1 Tbs olive oil
  • 3 Tbs white wine
  • Pinch of salt
  • Pinch of pepper
  • 1-2 oz goat cheese
  • 1-2 oz sun dried tomatoes
  • Drizzle of lemon fuzzed olive oil
  • Drizzle of balsamic glaze
  • 1 slice lemon twisted

Yields one portion. For for servings multiply all ingredients by 4.

Preheat oven to 350˚

Add olive oil over Mahi mahi fillet. Throw a pinch of salt and pepper over fillet. Place fillet in skillet season side down and sear for 2 minutes or until brown over high heat. Turn over. Spread goat cheese and sun dried tomatoes over fillet. Add white wine to deglaze pan and place in oven for 8-9 minutes.
Plate Mahi mahi in middle of dish. Drizzle lemon fuzzed olive oil and balsamic glaze over fillet. Garnish with twisted lemon slice.
