Rosemary Dijon Pork Tenderloin

This is the most amazing pork tenderloin I have ever had or made. Enjoy!


1/3 cup dijon mustard
2 Tablespoons black pepper
1 Tablespoon chopped fresh rosemary
5 garlic gloves finely minced
2 pork tenderloins (about 1 lb. each)
4 slices bacon

In a small bowl, whisk together the mustard, pepper, rosemary, and garlic. Rub the mustard mixture over the surface of the tenderloins, place on a plate and losely cover with plastic wrap, marinate for an hour.

Preheat oven to 375 degrees F

Place tenderloins on a baking sheet and top each with 2 slices of bacon, lengthwise. Bake for 25 to 30 minutes of until a meat thermometer registers 160 degrees F. Remove from the oven and allow to rest for 10 minutes. Slice and serve.
