Low-Calorie, Mild Spicy Moong Dal

Boil in 4 cups of water

1 medium chopped up onion

6 garlic cloves

Turn down to low fire and add

 2 cups of moong (also spelled 'mung') dal- yellow or red lentils

1/2 tsp each turmeric, cumin and salt to taste

Let simmer for 15-20 minutes, stirring occasionally.

 

Low-fat, tasty and easy!

Great side dish or eat just with roti, wraps or rice

If your lentils get too mushy, try using less water and only cook them for 15 minutes. Also, if you turn off the heat and let the pot set with the lid off for 10 minutes or so, some of the excess moisture will evaporate leaving your beans firmer. Bon appetit!
