I have always loved cabbage, but l have recently discovered Kimchi; a Korean dish which involves fermenting cabbage in a vinegar or something similar. lt gets to a point where it's very close to rotten so it has an undesirable smell, and the taste is certainly one you must acquire. The coolest part is the juice fizzing in your mouth b/c it's fermented!

Kimchee is Korean Sauerkraut - it is fermented with salt but the put their spices into it also. I love it too. It also loves us - it has lots of flora our digestive systems needs to keep us well. Yum!
