I love the tart-sweetness of cherries.  They're one fruit that manages to retain some of that balance in pie form.  Much as I love both apples and peaches, both tend to be far too sweet in pies.  (Yes, I am picky!!)

But cherry pie...yum.  Tart-sweet of the fruit that bleeds into the rest of the filling, flaky pastry baked golden-brown...
