Authentic Chinese-garlic Flavored Cucumber Salad

A lot of times I have to struggle between food. Good, simple food to make and eat. For example,  today, as I get off work, I struggled about whether to make seafood flavor cucumber or the garlic flavor cucumber. Well , since I was really hungry, let’s choose the latter. Take a lot at your watch…it will be done in ….5-10 min.



 Ingredients ( feel free to check the ingredients in Sophia’s Food Wiki , regarding their looks, flavor, effects/ benefits and  other)



  1. 1-2 cucumber


  2. Several Garlic / or Garlic Sauce available from Asian market


  3.  1 small spoon of  salt. sugar, rice vinegar, sesame oil, chicken essence,



 Steps(see detailed picture below)



  1. Peel the cucumber ( personally feel it tastes better with skin peeled; and I use skin for masks ^_^) or leave the skin on


  2. Beat/Pat the cucumber with side of knife (recommend using a Chinese kitchen knife) so the flavor gets in easier


  3. Slice cucumber into any shape you like


  4. Put them into a bowl and mix it well with salt.


  5. Mince the garlic or get 1-2 spoons of garlic sauce.


  6. Wait for about 3-5 min ( up to 20 min , depends on how salty you’d like the dish to be) for some juice to come out.


  7. Drain the juice, and put in sugar, rice vinegar, sesame oil, chicken essence, mix well


  8. Plating as you like.



 



Taste:



  • Slightly sweet and sour.


  • Can tastes garlic but not overwhelming

Tips:



  • Drain the juice from cucumber first before mix other seasoning, Otherwise, too salty and too much liquid
