Cornmeal Porridge


1/4 cup cornmeal

1 1/2 cups water

1/4 tsp salt

1/2 cup condensed milk

1 tsp vanilla



1. Mix the cornmeal with 1/2 cup of the water

2. Bring the remaining 1 cup of water to the boil

3. Stir in the cornmeal mixture and salt

4. Continue cooking for 10 minutes

5. Add condensed milk and vanilla

6. Top with grated cinnamon and nutmeg

Makes 3-4 servings

I put vanilla and almond flavored soy milk in oatmeal. I haven't used this g time but my recipe in a ephews love long time but my nieces and nephews love it.

Sounds very comforting on a cold night like this. I would have never thought of the combination of vanilla and cornmeal. I put vanilla in my cream of wheat. I will try it soon.
