Toasty With Strawberry Preserves

I love to slice English muffins in half.... toast them slowly on a pan just hot enough to get them golden brown all over, then I spread butter (vegan earth balance) across them and watch as the butter melts, golden yellow, just saturating the surface of the muffin so the crispy edges just become soft and chewy enough to easily spread cold strawberry preserves evenly across each half. Then I close my eyes and bite in and enjoy the sensation of my teeth making their way through the layers of cool strawberry preserves, warm butter that gently gushes out as I make it past the semi-crunchy toasty surface right into the chewy warm middle. Fantastic.
