Savory Sage Chicken... Boiled Potato Salad.Sage chicken
10 Pieces Frozen tenderloin chicken
Dried Sage seasoning
1.To thaw chicken, set the microwave defrost option to two pounds ( thats about 18 minutes).
2.Pour just enough olive oil into the skillet to cover the bottom, heat the skillet on a burner set to 7.
3. To brown the chicken. Season one side of the chicken with the sage, salt, and pepper( amount varies to taste),
Lay the chicken in the pan, brown the unseasoned side first, when that side is done, flip, repeat. It takes about five min. for each side.
4. Now add water, about 2/3rds of a cup ( just enough liquid to cook the chicken and ensure that it stays nice and juicy. The amount may vary according to how big your skillet is, I used a 12inch skillet) cover the skillet with a lid, lower the heat setting to 3, and let cook for 20 minutes.
Fresh Boiled potato salad
This is really simple, I boil a potato, adding a pinch of salt to the water.
I wash some lettuce, or whatever greens I happen to be using. If your just looking for a zero calorie filler, lettuce works. If you are looking for more nutritional value, go for baby spinach greens, or a mixed garden salad.
I make a bed of lettuce on my plate, you can add slivered carrots, turnip, bell pepper, even fresh sweet potato to give it a crunch,
Then I mash up the warm potato, sprinkle it over the salad, season with salt&pepper.
Then top it all off with a smattering of grated cheese, preferably mozzerella, and a drizzle of Sweet vidalia onion dressing.
This is a pretty healthy, quick to make, and very tasty dinner ( well according to my taste buds anyway) try it out, you might like it too.
