My Grandmother...

She made these totally awesome yummy strawberry rhubarb custard pies... with pure honey (thy would buy it by the bucket full in MT) and man... those were the best pies ever! *sigh* I miss my grandmother (she died of brain cancer last june... but that's another story) :(

My family on my Dad's side used to make just rhubarb pie, forget the strawberries. I guess that's why I like tangy fruit.

Rubarb-strawberry-custard Pie<br />
<br />
• 1 1/2 cups rhubarb, cut in 1 " pieces<br />
• 1 1/2 cups sliced strawberries<br />
• 1 cup white sugar<br />
• 2 tablespoons butter<br />
• 1 egg<br />
• 2 tablespoons flour<br />
• 1 uncooked pie shell<br />
TOPPING<br />
• 2 tablespoons brown sugar<br />
• 3 tablespoons flour<br />
• 2 tablespoons butter<br />

Directions <br />

Place rhubarb in a bowl and cover with boiling water for about 5 minutes.<br />
Meanwhile, with a mixer, mix sugar, egg, butter and flour until smooth.<br />
Strain rhubarb well.<br />
With wooden spoon, add strawberries and rhubarb to batter and mix.<br />
Pour into uncooked pie shell.<br />
Mix topping ingredients with a fork, and sprinkle over uncooked pie.<br />
Bake at 375 for 50 minutes or until set.<br />
Top with whipped cream if desired.
