Mexican Cooking

I have liked Mexican food for as long as I can remember.  When I was in elementary school, my birthday parties always had a burrito bar rather than pizza as the food, because it was my birthday and I wanted my favorite food!  My sisters always opted for their birthday dinner to be dinner at Chevy's Tex Mex, so the love of Mexican food, or at least American Mexican food, runs in the family. 
In high school, I tasted my aunt's guacamole and the world of cilantro was opened to me.  I started looking beyond fast food for Mexican food, and began to cook Mexican for myself as well.  Now I can't go back to the bland "Mexican" food I ate before.  I am by no means an amazing Mexican cook yet, but I am slowly learning, and loving the process!

I love guacamole!

Ahhhh guac is the secret weapon of all mexican food and one of the hardest to prepare. A girl could easily steal my heart with freshly prepared guac muah!

Did you know that guacamole is one of the finest first foods for a baby starting solids? We are currently freezing ice cube trays of a variety of pureed foods ready for my grandson, who is just weeks away from beginning his gourmet days, and I could use some advice on how or if guacamole is best frozen.

ahhh mexican food ... a true blessing in this sad world, a delight to my palate and my favorite culinary adventure.

When my partner and I first started dating for the celebration of our one month together I cooked up a bunch of Mexican food and sort of had a buffet with him. We had the best enchiladas. We haven't eaten anything similar since.
