A Rare Place

One thing I love about France and of course Paris is the maturity of the waiting staff in so many restaurants. Nothing against students serving as they do throughout many UK restaurants but in France it's just so great to be served by people who have been doing it for ever and take a real pride in it. Certainly, they can sometimes allow their obvious pride and skill in gastronomy to show. I watched a couple of obvious Brits asking for well done steaks. In this particular place the chef cooked the steaks by waving them over a candle. the steaks were returned two or three times without any evident darkening of their complexion. Eventually they got the point that the chef didn't do well done.
