Always Trying Something Else

I am still new enough to sushi that I am still working my way down the menu. I prefer nigri to rolls. I have had all of the basics. Grilled eel and scallops are my favorite. I recently tried uni (sea urchin roe) and was not very impressed. I had a roll once with crispy salmon skin and thought it was a little odd. Any ideas on what I should try next?
