I just made some delicious mint chocolate cookies for a church function and they are incredible!!! The best thing is, they're super-easy because I cheated!

1 box of chocolate cake mix
Three eggs
1/4 cup water
1/4 cup oil
1 tsp peppermint extract
1 box instant chocolate pudding mix
1 +1/2 cup Andes Mints baking chips

Preheat oven to 350 F. Whisk eggs, water, oil, and peppermint extract in a medium bowl. Add pudding mix and mix until combined. Add cake mix and stir until smooth. Fold in baking chips and blend well. Drop rounded tablespoons of mix onto a cookie sheet lined with parchment paper. Bake for 10-12 minutes. Allow baked cookies to set for 3-4 minutes after removing from oven, then place on paper towels to finish cooling.

This recipe is easily doubled or tripled, because a single mix only makes about 2-3 dozen cookies and they will go fast!
