Mama's No Weep No Fail Lemon Meringue

This is the best lemon meringue pie I have ever tasted.
I remember one time us kids fought over the last piece so intensely (6 pieces 5 kids) that from that point on she always made two.

Thank goodness!

Lemon filling: (filling for one pie)

2 1/4 c. water
1 c. granulated sugar
1/4 c cornstarch
1/2 tsp. salt
1/4 cup fresh squeezed lemon juice
3 eggs separated (reserve whites for meringue)
1/2 stick of butter (not oleo)

Heat water to near boiling: mix sugar, cornstarch and salt together in bowl, add egg yolks ix well but do not beat. Slowly add mixture to boiling water, boil slowly until mixture thickens. remove from heat, add lemon juice and butter, mix well. Pour into 9" pie crust and top with meringue, brown in preheated 350 degree oven. Approx 15 minutes or until golden brown, turn of oven and let cool inside the with oven door open. (meringue and crust recipe below)

No fail pie crust:

1 c. lard (crisco is perfect) as lard is hard to find
3 c. flour
1 tsp salt
1 egg, beaten
5 Tbsp. ice water
1 Tbsp vinegar

Cut Lard (shortening) and salt into flour until it resembles a fine crumb mixture. Combine egg, vinegar and water. Sprinkle over dry ingredients, mix with a fork. shape into 3 balls and roll out onto floured board. place into pie pans and bake as recipe directs. (makes 3 crusts) Mama always made an extra just in case..:)

No weep meringue: (for one pie)

1 Tbsp. cornstarch
1/2 tbsp cold water
1/2 c. boiling water
3 egg whites
6 Tbsp. sugar
1 tsp vanilla extract (reduce if real vanilla)

Mix cornstarch and cold water in small saucepan, add boiling water, cook until thick, set aside to cool.
beat egg whites to soft peaks. Add cool cornstarch mixture and beat until stiff. Add sugar, 1 tbsp at a time until very stiff. Add vanilla. Top pie with meringue, bake as directed above.

Hope you enjoy it as much as we did, apparently it's worth dying for in our family..:)

Aww thanks Julie but hubs is always trying to put a few pounds on me.....This pie could help those efforts!! I LOVE it! I'm not on of those lush, "curvy" girls.... I'm not veryyyy skinny but a little more padding wouldn't hurt!! Lemon meringue padding sounds sooo gooood!! :D

We say that and then after ten years of greed, we end up with lots of extra pounds, and no way to eliminate them.
