Rustic pear and cheese pie


Sweet pie crust recipe divided in ¼. (recipe below)


1 egg yolk beaten

4 oz. cream cheese

½ cup sour cream

¼ t. orange peel

½ t. vanilla extract

¼ cup sugar

Pinch of salt

Pinch of nutmeg

½ T flour


Combine egg yolks and softened cream cheese; beat smooth.

Blend in sour cream, orange peel, and vanilla.

Combine ¼ cup sugar, flour, salt, nutmeg; add to cheese mixture ; mix well.


Roll out pie into 4 individual pies, spread cheese mix to ½ inch of edge, place thin slice pears over top and fold edges of pies over.


Bake in 350° oven for 20 minutes or till set and crust is light golden brown.


Sugar, butter and a dash of vanilla are added to the flour and chilled shortening, so this wonderful pastry is much like a sweet shortbread cookie. It 's perfect for cherry or other fruit fillings. This recipe yields one 9-inch crust."




2 cups all-purpose flour

2 tablespoons white sugar

1 teaspoon salt

1 teaspoon vanilla extract

1/2 cup unsalted butter, chilled

4 tablespoons shortening, chilled

5 tablespoons ice water



Place flour in a bowl with the sugar and salt. Cut the butter and shortening into pieces, and cut into the flour until crumbly. Mix in vanilla. Add just enough water to form a ball: it should not be sticky. Knead quickly into a smooth ball. Wrap in plastic wrap, and chill for 1 hour.

When ready to make pie, roll dough out as you would any crust. Do not let sit out, or handle excessively allowing to soften. Easiest to work with if firm.
