Banana PuddingMy Grandmother made the best Banana Pudding and she made it from scratch. One day I was trying to write the recipe down, when she told me I could find it on the box of Nilla wafers. Okay that was simple enough. Well as my family grew, so has the recipe and how I make it. I know longer can make a double batch, which will make one normal casserole dish. I have to make two large lasagna pans. Which is about 8 batches of pudding. Which requires a 18qt metal mixing bowl and a large deep skillet to hold the water. I basically had to make my own double boiler. But with four kids and a husband, who act like locusts when the first one comes out of the oven, and its basically gone in minutes, I had too. The second one never gets any meringue, that one is for me. Well who am I kidding, I get a little and the family eats the rest.
For me Banana Pudding reminds me of my Grandmother and how she was always cooking. And when she found out it was my husband's favorite, she would make two, one to eat while we where there and one to take home. She loved him more than me I think sometimes. It was what we ate, because it was simple but filling.
One of the girls on my son's Air RIfle team had never had Banana Pudding before and heard her English Teacher go on and on on about how a parent made some for his wife and him and when she was on bed rest. Well my son walked in and the teacher informed her that was his mom that made the Banana Pudding. Well this got back to me and we had to make her some and it had to be just out of the oven for her to eat it. So for the next practice she got some. She said it was the best thing she had ever ate. She called her Mom and had her come to practice, she had it before but never warm. It was like a different dessert. Trust me if you have never had it right out of the oven, you are really missing out on something wonderful. To me for it go in the fridge is a travesty. Banana pudding is made to be ate right from from the oven.
Its actually amazing the number of people that have never had it before. The girls at my grocery store had never had it, so I made some for them. Its one of those things, I love to make and will always make it for pot lucks. Thank you Granny for passing that on to me.
