Plaid's Pie

For starters, a good chewy New York style crust.

Add a moderate amount of freshly made tomato sauce.  It needs to have enough flavor that you know it's there, but not overpower the toppings.

Next, the cheese.  Mozzarella and Provolone and Parmesan is a good basic blend.  Be heavy-handed here.  It's okay.

Toppings:  Caramelized onions. (Generosity is a virtue here too!)  Fresh, ripe tomatoes.  Other toppings are nice, but my Perfect Pie is a simple thing.

Bake it in a brick oven, please.  Bake it until the crust is browned and all the cheese is melted and bubbly.

Deliver to me, and depart.  I don't want you to see me making a glutton of myself!
