Chicken Adobo

I want to share my kids' favorite "adobo".Its a Filipino dish.Hope someone try this and give me a feed back. Its simple and easy to prepare.

500 g. chicken(any part you prefer)-cut into serving portions
1 medium potato
1/4   c. soy sauce
1/4   c. vinegar
 2 tbsp. oyster sauce
1      head of garlic minced
1 medium size red onion minced
 2 pcs. bayleaf
1 tsp. peppercorn

Combine all the ingredients in a pot.Let stand for about 20-30 minutes. Then simmer in medium heat.Add some water just enough to cook the meat.Stir occassionally so the sauce will completely cover the meat.Simmer until cooked or the sauce thickens.Add some salt in pepper according to your desired taste.Best served with steaming rice.

*If you want it spicy just add 2 red crushed chili.

This sounds amazing! But my husband is allergic to fish/fish products. Is there anything you would recommend using in place of the oyster sauce? Should I just omit it? Thanks!

I am from Chicago, IL but my grandfather was born in the Philippines

thanks franchescia!!!!!

My grandfather loves Chicken Adobo i will have to try this version out =)

jimmy, adobo tastes better while it last...even after 3 days in the fridge then reheat, the flavor is better.

I'll get back to you with feedback. I like to try new things, although living alone sometimes makes me keep things simple out of lazyness, I guess... Too much work sometimes when cooking for only one person...<br />
I'm all in for the pork as well, Shakira : )
